The Mughals ruled a major part of India from 1426 to 1857. This led to the introduction of Mughlai cuisine in India.  It was rich in taste and cooked using special spices, nuts, and dried fruits, which lends a distinct aroma to the food. Mughlai food can range from mild to spicy.

The Mughal Empire used Persian as their official language, which is why Mughlai dishes have a Persian name. It was served to the royals at the time.

Some of the popular Mughlai dishes are Mughlai Paratha, Murg Musallam, Kebabs, Kofta, Pulav Phirni, Shahi Tukda, and Biryani.

Some of the trendy dishes of Mughlai Cuisine are as follows:

  1. Mughlai Paratha

They are tasty and quite filling. Served best with a side of potato curry, this is a prevalent dish in West Bengal

  • Biryani

Variants of the Biryani are famous all over India. Earlier, Biryani was considered a royal dish and was only served in the royal family.

  • Nargisi Kofta

A popular variant of the Veg Kofta, this kofta is prepared with lamb meat and egg. The koftas are prepared separately, and the curry is prepared separately for this dish.

  • Shahi Tukra

Pieces of bread are fried in ghee. It is a sweet dish that is quite popular in the Mughlai cuisine in India. These pieces of bread are then coated in Rabri (which is another sweet dish)

Saffron, Cardamom, and Cinnamon can be added to enhance its taste. It is served chilled usually but can be eaten warm as well.

  • Shahi Kaiju Aaloo

A part of the main course, baby potatoes are cooked in Mughlai curry. Cashew nuts or Kaiju are added to the dish.  Cashew paste is added to the container along with few chunks of cashews.  

  • Reshami Kebabs

These are the popular juicy kebabs that are the most famous part of Mughlai cuisine. These creamy kebabs are marinated in cream, and with some spicy masalas added, it is cooked in tandoor.
